Description

This Pan-Seared Lamb Chops with Mustard-Thyme Sauce recipe offers tender, juicy lamb chops cooked to perfection with a flavorful mustard and fresh thyme sauce. Ideal for an elegant yet simple dinner, the searing technique locks in the meat’s natural juices while the tangy sauce enhances the rich flavor of the lamb.

Ingredients

Lamb Chops

  • 4 lamb chops, about 1 inch thick
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Mustard-Thyme Sauce

  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 1 teaspoon fresh thyme leaves, chopped
  • 1 tablespoon unsalted butter
  • 1/4 cup dry white wine or chicken broth
  • 1 garlic clove, minced

Instructions

  1. Prepare the Lamb Chops. Pat the lamb chops dry with paper towels, then season both sides generously with salt and freshly ground black pepper to enhance flavor.
  2. Heat the Pan. Heat a large skillet over medium-high heat and add the olive oil, allowing it to get hot but not smoking to ensure a perfect sear.
  3. Sear the Lamb Chops. Place the lamb chops in the hot skillet and sear for 3-4 minutes on each side, or until browned and cooked to your desired level of doneness (medium-rare recommended). Remove the chops from the pan and set aside to rest.
  4. Make the Sauce Base. In the same skillet, reduce heat to medium, add the minced garlic, and sauté briefly until fragrant, about 30 seconds, being careful not to burn it.
  5. Deglaze the Pan. Pour in the white wine or chicken broth to deglaze the pan, scraping up any browned bits from the bottom, and let it simmer for 2 minutes to reduce slightly.
  6. Add Mustards and Thyme. Stir in the Dijon and whole-grain mustards along with chopped thyme leaves, combining thoroughly to form the sauce.
  7. Finish the Sauce. Remove the skillet from heat and gently whisk in the butter until the sauce is smooth and glossy.
  8. Serve. Spoon the mustard-thyme sauce over the rested lamb chops and serve immediately, garnished with extra thyme if desired.

Notes

  • For best results, let the lamb chops come to room temperature before cooking.
  • Use fresh thyme for optimal flavor; dried thyme can be substituted but use half the quantity.
  • Allowing the meat to rest after cooking helps retain its juices.
  • If you prefer a thicker sauce, simmer longer or add a small amount of cornstarch slurry.
  • Pair this dish with roasted vegetables or creamy mashed potatoes.
