Instructions
- Prepare the Poaching Liquid: In a large saucepan, combine water, sugar, the split vanilla bean, and lemon juice. Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar dissolves.
- Poach the Peaches: Gently add the peach halves to the simmering liquid. Poach for about 5 to 7 minutes until the peaches are tender but still hold their shape. Remove the peaches carefully with a slotted spoon and let them cool slightly. Remove vanilla bean pod from the liquid.
- Make the Raspberry Sauce: In a small saucepan, combine raspberries, sugar, lemon juice, and water. Cook over medium heat until the raspberries break down and the sauce thickens slightly, about 5 to 8 minutes. Strain the sauce through a fine sieve to remove seeds for a smooth texture if desired.
- Assemble the Dessert: Place two peach halves in each serving bowl. Add a scoop of vanilla ice cream to each bowl, then generously drizzle with raspberry sauce.
- Garnish and Serve: Garnish with fresh raspberries and mint leaves if using. Serve immediately for best taste and texture.
