Ingredients
Salmon
- 2 salmon fillets (approximately 6 ounces / 175 grams each)

Glaze and Crust
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1/4 teaspoon Dijon mustard
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon honey
- 1/3 cup pistachios, coarsely chopped
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the salmon.
- Prepare Salmon: Rinse the salmon fillets under cold water and pat them thoroughly dry with paper towels. Place them skin-side down on a parchment-lined quarter sheet baking pan. Season both fillets generously with salt and pepper.
- Make the Glaze: In a small mixing bowl, combine the minced garlic, olive oil, Dijon mustard, freshly squeezed lemon juice, and honey. Mix these ingredients well to create a flavorful glaze.
- Apply Glaze: Spread about three-quarters of the glaze evenly over the top of the salmon fillets, ensuring an even coating for flavor.
- Prepare Pistachio Crust: Add the coarsely chopped pistachios to the remaining glaze mixture in the bowl and stir until the nuts are well incorporated into the mixture.
- Top Salmon: Spoon the pistachio mixture evenly over the glazed salmon fillets and gently press it into the surface using the back of a spoon to form a crust.
- Bake: Place the baking pan in the preheated oven and bake the salmon for approximately 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork and the pistachio crust is golden and crisp.
