Description

A vibrant and refreshing Plum Spinach Salad combining sweet, juicy plums with fresh spinach leaves, tangy goat cheese, crunchy walnuts, and a zesty balsamic vinaigrette. Perfect for a quick, healthy meal or a light side dish.

Ingredients

Salad Ingredients

  • 4 cups fresh spinach leaves, washed and dried
  • 3 ripe plums, pitted and sliced
  • 1/2 cup walnuts, toasted and roughly chopped
  • 1/4 cup crumbled goat cheese

Vinaigrette Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, salt, and pepper. Slowly drizzle in the olive oil while whisking continuously until the dressing is well emulsified.
  2. Toast Walnuts: Heat a skillet over medium heat, add the walnuts and toast them for 3-5 minutes, stirring frequently until fragrant and lightly browned. Remove from heat and let cool.
  3. Prepare Salad Base: Place the fresh spinach leaves in a large salad bowl. Add the sliced plums and toasted walnuts on top.
  4. Add Cheese: Sprinkle the crumbled goat cheese over the salad evenly.
  5. Toss the Salad: Drizzle the prepared balsamic vinaigrette over the salad just before serving. Toss gently to coat all ingredients without bruising the spinach or breaking the plums.
  6. Serve: Serve immediately as a light lunch or a refreshing side dish with your favorite main course.

Notes

  • Ripe but firm plums work best to maintain texture in the salad.
  • You can substitute goat cheese with feta or blue cheese if preferred.
  • For a vegan version, omit the cheese or use a plant-based cheese alternative.
  • Walnuts can be replaced with pecans or almonds for a different nutty flavor.
  • Ensure to toast the nuts as it enhances their flavor and crunch.
  • Adjust sweetness in the dressing by adding more honey or maple syrup according to taste.
