Ingredients

Cookie Dough

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 ½ cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 3 to 4 tablespoons buttermilk

Royal Icing

  • 3 cups powdered sugar
  • 2 large egg whites or 4 tablespoons meringue powder with 6 tablespoons water
  • ½ teaspoon vanilla extract
  • White food coloring (optional)
  • Black or dark brown food coloring or melted chocolate for claws and paw pads

Instructions

  1. Prepare the Dough: In a medium bowl, whisk together the flour, baking soda, and baking powder. In a large bowl, cream together the butter and sugar until smooth and fluffy. Beat in the egg, vanilla extract, and almond extract. Gradually add the dry ingredients, alternating with buttermilk, mixing until the dough is soft but not sticky.
  2. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour to firm up, making it easier to roll and cut.
  3. Roll and Cut Cookies: Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough to about ¼ inch thickness. Use a polar bear paw-shaped cookie cutter or create one by combining a large circle (for the paw pad) and four small circles (for toe pads). Cut out shapes and place them 2 inches apart on ungreased cookie sheets.
  4. Bake the Cookies: Bake in the preheated oven for 8 to 10 minutes or until edges are just starting to turn golden. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
  5. Prepare the Royal Icing: In a mixing bowl, beat powdered sugar with egg whites or meringue powder mixture and vanilla until stiff peaks form. Divide the icing into two bowls; leave one portion white and color the other black or dark brown using food coloring or prepare melted chocolate for detail work.
  6. Decorate the Cookies: Using a piping bag with a small round tip, outline and flood the paw pad area with white royal icing. Use the black or brown icing or melted chocolate to pipe the claws and paw pad details. Allow the icing to dry completely, about 4 hours or overnight, so the design sets.
