  • 1 scoop vanilla whey protein powder (about 30g)
  • 1 teaspoon baking powder

  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet Ingredients

  • 3/4 cup canned pumpkin puree
  • 2 large eggs
  • 1/2 cup milk (dairy or plant-based)
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil or butter

Instructions

  1. Prepare the dry mixture: In a large bowl, whisk together the whole wheat flour, whey protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  2. Mix the wet ingredients: In a separate bowl, beat the eggs and then add the pumpkin puree, milk, maple syrup, vanilla extract, and melted coconut oil. Stir until smooth and well incorporated.
