Ingredients
Crust
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- 6 tablespoons unsalted butter, melted
Cheesecake Filling
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- ¼ cup all-purpose flour
Pumpkin Swirl
- 1 cup canned pumpkin puree
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 2 tablespoons brown sugar
Instructions
- Prepare the crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture evenly into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes until fragrant and set. Remove from oven and let cool.
- Make the cheesecake filling: In a large bowl, beat softened cream cheese with granulated sugar until smooth and creamy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract, sour cream, and flour until fully combined and smooth.
- Prepare the pumpkin swirl: In a separate bowl, mix pumpkin puree with cinnamon, nutmeg, cloves, and brown sugar until well blended.
- Assemble the cheesecake: Pour half of the cheesecake batter over the cooled crust in the springform pan. Spoon half of the pumpkin mixture in dollops over the batter. Use a knife or skewer to swirl the pumpkin gently through the batter. Repeat with the remaining batter and pumpkin mixture, swirling again to create a marbled effect.
- Bake the cheesecake: Place the cheesecake in the preheated oven and bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the oven door slightly ajar for 1 hour to cool gradually, which helps prevent cracks.
- Chill and serve: Remove the cheesecake from the oven and cool completely at room temperature. Refrigerate for at least 4 hours or overnight before removing from the springform pan. Slice and serve chilled.
Notes
- For best results, use full-fat cream cheese and sour cream to achieve a rich, creamy texture.
- Allow the cheesecake to cool gradually in the oven to avoid cracking on the surface.
- You can substitute the pumpkin pie spices with a pre-made pumpkin pie spice blend if desired.
- Store leftover cheesecake covered in the refrigerator for up to 5 days.
- Bring cheesecake slices to room temperature before serving for optimal flavor and texture.
