Ingredients
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients
- 3 ripe bananas, mashed
- 3/4 cup sugar
- 1 large egg, beaten
- 1/3 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Optional Add-ins
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt until evenly combined.
- Prepare Wet Ingredients: In another bowl, mash the ripe bananas thoroughly using a fork. Add the sugar, beaten egg, melted butter, and vanilla extract. Mix well until smooth and combined.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients bowl. Stir gently with a spatula or spoon until just combined. Do not overmix to keep muffins tender.
- Add Optional Ingredients: Fold in chopped nuts or chocolate chips if using, distributing them evenly throughout the batter.
- Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full for optimal rise.
- Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and Serve: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
Notes
- Use very ripe bananas with brown spots for the best natural sweetness and flavor.
- Do not overmix the batter to avoid tough muffins; mix until ingredients are just combined.
- For a dairy-free option, substitute melted butter with coconut oil or a plant-based margarine.
- Muffins can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
- Freeze leftover muffins for up to 3 months; thaw at room temperature before serving.
