Ingredients

  • 8 oz noodles (rice noodles or spaghetti)
  • 1 cup coconut milk
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons soy sauce or tamari
  • 1/2 teaspoon red chili flakes or 1 teaspoon chili paste
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar or honey
  • 1 tablespoon olive oil or sesame oil
  • 2 green onions, sliced
  • 1 cup vegetables like bell peppers or spinach (optional)

Instructions

  1. Cook noodles according to package instructions, then drain and set aside.
