Description

Ingredients

Layers

  • 2 cups canned refried beans (or vegetarian refried beans)
  • 1 1/2 cups Easy Guacamole (or store-bought)
  • 2 cups Fresh Tomato Salsa (or your favorite salsa)
  • ⅓ cup chopped green onion (white and green parts)
  • ⅓ cup sliced black olives
  • ½ cup thinly sliced iceberg lettuce
  • ½ cup sliced cherry tomatoes

Topping

  • ¼ cup avocado mayonnaise (vegannaise, or sour cream)
  • 2 tablespoons lime juice

Instructions

  1. Layer Refried Beans: Spread the refried beans evenly into the bottom of a 9×13 inch baking dish to create the first layer of the dip.
  2. Add Guacamole: Spoon the guacamole over the refried beans, smoothing it out into an even second layer to cover the beans completely.
  3. Pour Salsa: Pour the fresh tomato salsa on top of the guacamole, spreading it evenly to form the third layer.
  4. Sprinkle Vegetables: Sprinkle an even layer of chopped green onion, sliced black olives, thinly sliced iceberg lettuce, and cherry tomato slices over the salsa layer.
  5. Prepare Drizzle: In a small bowl, whisk together the avocado mayonnaise (or vegannaise or sour cream) with lime juice until well combined.
  6. Drizzle Topping: Drizzle the avocado mayonnaise and lime juice mixture over the vegetable layer to finish the dip.
