Description

Ingredients
- 4 cups fresh rhubarb, chopped
- 1 cup sugar
- 1 cup apple cider vinegar
- 1 tbsp lemon juice
- 1 tbsp fresh ginger, sliced (optional)
- 1 cup strawberries, sliced (optional)
- Sparkling water for serving
Instructions
- Wash and chop the rhubarb into small pieces.
- Place the rhubarb in a bowl and mix with the sugar.
- Add optional ginger or strawberries if desired.
- Cover and let the mixture rest for 8 to 12 hours or overnight until the rhubarb releases its juices.
- Strain the mixture through a fine mesh strainer, pressing gently to extract the syrup.
- Stir apple cider vinegar and lemon juice into the syrup until fully combined.
- Pour the shrub into a clean glass bottle or jar.
- Refrigerate before serving.
- To serve, mix a small amount of shrub with sparkling water and ice.

- Frozen rhubarb can be used after thawing slightly.
