Description

A vibrant and nutritious Roasted Beet Salad featuring tender roasted beets, creamy goat cheese, crunchy walnuts, and fresh greens, all tossed in a tangy balsamic vinaigrette. This salad offers a perfect balance of earthy, sweet, and tangy flavors, ideal as a light lunch or an elegant starter.

Ingredients

Salad Ingredients

  • 4 medium beets, washed and trimmed
  • 4 cups mixed greens (arugula, spinach, or your choice)
  • 4 oz goat cheese, crumbled
  • 1/2 cup walnuts, toasted
  • 1 small red onion, thinly sliced

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Beets: Preheat your oven to 400°F (200°C). Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes until beets are tender when pierced with a fork.
  2. Cool and Peel: Let the roasted beets cool slightly. Once cool enough to handle, rub off the skins using your hands or a paper towel. Slice the beets into wedges or cubes.
  3. Make the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until well combined and emulsified.
  4. Assemble the Salad: In a large salad bowl, combine the mixed greens, sliced roasted beets, red onion, and toasted walnuts. Drizzle the dressing over the salad and toss gently to combine.
  5. Add Goat Cheese: Sprinkle the crumbled goat cheese evenly over the top of the salad. Serve immediately for the freshest flavor.

Notes

  • Beets can also be roasted unwrapped on a baking sheet; just ensure to cover with foil if they start drying out.
  • For quicker beet cooking, consider steaming or microwaving, but roasting enhances their sweetness.
  • Walnuts can be substituted with pecans or almonds for different textures and flavors.
  • Use fresh goat cheese for the best creamy texture and flavor contrast.
  • This salad pairs beautifully with grilled chicken or quinoa for a more filling meal.
