Roasted Tomatoes
- 2 pints cherry tomatoes
- 3 tablespoons olive oil

Pasta and Finishings
- 12 ounces pasta (penne or fusilli recommended)
- 1 ball burrata cheese (about 8 ounces)
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons fresh parsley, chopped
- 1/4 cup grated Parmesan cheese (optional)
- Extra virgin olive oil, for drizzling
- Red pepper flakes (optional, to taste)
Instructions
- Preheat and Prepare Tomatoes: Preheat your oven to 400°F (200°C). Rinse the cherry tomatoes and place them on a baking sheet. Toss them with olive oil, minced garlic, salt, pepper, and dried oregano until well coated.
- Roast Tomatoes: Roast the tomatoes in the preheated oven for 25-30 minutes, or until they are softened, slightly caramelized, and bursting. Stir halfway through roasting for even cooking.
- Cook Pasta: While the tomatoes roast, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta.
- Combine Pasta and Roasted Tomatoes: In the pot or a large mixing bowl, combine the hot pasta with the roasted tomatoes, stirring gently to mix. Add reserved pasta water a little at a time if the mixture seems dry to help create a sauce.
- Add Burrata and Herbs: Tear the burrata cheese into pieces and fold gently into the pasta so the creaminess spreads throughout. Stir in fresh basil and parsley to add a fresh, herby flavor.
