Ingredients
Quinoa
- 1 cup quinoa, rinsed
- 2 cups water
- ¼ teaspoon salt
Roasted Vegetables
- 1 medium zucchini, chopped
- 1 medium red bell pepper, chopped
- 1 medium yellow bell pepper, chopped
- 1 medium red onion, chopped
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
Lemon-Tahini Dressing
- 3 tablespoons tahini
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 2 tablespoons warm water
- 1 teaspoon maple syrup or honey (optional)
- Salt, to taste
Garnish (optional)
- Fresh parsley, chopped
- Toasted pumpkin seeds or walnuts
Instructions
- Cook the quinoa: In a medium saucepan, combine rinsed quinoa, water, and salt. Bring to a boil over medium-high heat, then reduce to a simmer and cover. Cook for about 15 minutes, until the quinoa is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- Prepare and roast the vegetables: Preheat your oven to 425°F (220°C). On a large baking sheet, toss zucchini, red and yellow bell peppers, red onion, and cherry tomatoes with olive oil, dried oregano, salt, and pepper. Spread them in a single layer. Roast for 20-25 minutes, stirring halfway through, until vegetables are tender and slightly browned.
- Make the lemon-tahini dressing: In a small bowl, whisk together tahini, lemon juice, minced garlic, and warm water until smooth and creamy. Add maple syrup or honey for a hint of sweetness if desired. Season with salt to taste. Adjust consistency with more water if needed.
- Assemble the bowls: Divide the cooked quinoa among serving bowls. Top with the warm roasted vegetables. Drizzle lemon-tahini dressing generously over the bowls.
- Garnish and serve: Sprinkle with chopped fresh parsley and toasted pumpkin seeds or walnuts for added texture and flavor. Serve immediately for the best taste, or store components separately for meal prep.
Notes
- Rinse quinoa thoroughly before cooking to remove its natural bitterness.
- You can substitute the roasted vegetables with seasonal favorites like sweet potatoes, broccoli, or eggplant.
- The lemon-tahini dressing can be made ahead and stored in the refrigerator for up to 3 days.
- For added protein, consider topping with chickpeas or grilled tofu.
- Adjust seasoning and spice level according to your preference; a pinch of red pepper flakes can add a nice kick.
