Ingredients
Vegetables
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 large carrots, peeled and sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium zucchini, sliced
- 1 medium red onion, cut into wedges
Seasonings
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it is hot and ready for roasting the vegetables evenly.
- Prepare the vegetables: Wash and chop all the vegetables into bite-sized pieces. Make sure they are relatively uniform in size to promote even cooking.
- Toss with oil and seasonings: In a large mixing bowl, combine the chopped vegetables with olive oil, garlic powder, dried thyme, dried rosemary, salt, and black pepper. Toss well to coat all vegetables evenly.
- Arrange on a baking sheet: Spread the seasoned vegetables in a single layer on a large baking sheet lined with parchment paper or a silicone mat to prevent sticking.
- Roast the vegetables: Place the baking sheet in the preheated oven and roast for 25-30 minutes, stirring or flipping the vegetables halfway through the cooking time to ensure even browning and tenderness.
- Check for doneness: The vegetables are done when they are tender and lightly browned on the edges. Remove from the oven and let cool slightly before serving.
Notes
- For a spicier twist, add a pinch of red chili flakes when tossing the vegetables.
- You can substitute or add other vegetables like Brussels sprouts, sweet potatoes, or mushrooms based on preference.
- Use fresh herbs instead of dried for a more vibrant flavor, but adjust quantity accordingly.
- The roasted vegetables can be stored in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven or on a skillet to maintain their crispiness.
