Baked together in one dish and then tossed with perfectly cooked pasta, it’s a creamy, comforting dish ready in just 30 minutes.
Ingredients
For the Pasta
- 14.5 ounces protein pasta (like Rotini or Penne)
For the Baked Salmon and Sauce
- 5 ounces (1 box) Boursin cheese
- 4 salmon fillets (skin removed)
- 1 pint cherry tomatoes
- 3 cloves garlic (minced)
- 1 tablespoon olive oil
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups baby spinach
Instructions
- Preheat the oven: Set your oven to 425 degrees Fahrenheit to prepare for baking the salmon and vegetables.
- Cook the pasta: Bring a large pot of water to a boil over high heat. Once boiling, add the protein pasta and cook according to the package instructions until al dente. Drain and set aside.
- Prepare the baking dish: In a large oven-safe pot or baking dish, place the Boursin cheese in the center. Arrange salmon fillets around the cheese. Add the cherry tomatoes and minced garlic around the salmon. Drizzle everything with olive oil and evenly sprinkle onion powder, paprika, salt, and black pepper over the entire dish.
- Bake the salmon and vegetables: Place the pot or dish in the preheated oven and bake for 20 minutes or until the salmon is fully cooked and flakes easily with a fork.
- Add spinach and mix: Remove the dish from the oven. Add the baby spinach to the pot and stir gently, breaking up the salmon into bite-sized pieces and combining it well with the melted Boursin, tomatoes, and spinach.
- Combine with pasta and serve: Add the cooked pasta to the pot and toss everything together until well mixed. Serve immediately while warm for a creamy and satisfying meal.
Notes
- You can substitute Boursin cheese with another herbed cream cheese if unavailable.
- Use skinless salmon fillets for easier serving and to avoid crisp skin.
- Add a squeeze of lemon juice before serving for a fresh, citrusy brightness.
- For a lower-calorie option, reduce the amount of cheese or use a light cream cheese.
- Protein pasta adds extra nutrition and keeps the dish hearty and filling.
