- Form the Bites: Using a small spoon or cookie scoop, portion the cheese mixture into small rounds or balls about 1 inch in diameter. Place them on a parchment-lined tray and refrigerate for 15 minutes to firm up.
- Prepare the Pistachio Coating: Toast the shelled pistachios in a dry skillet over medium heat for 2-3 minutes until fragrant, then finely chop. Mix the chopped pistachios with panko breadcrumbs and sea salt in a shallow dish.
