Ingredients
Shrimp Marinade and Cooking
- 1 lb (450g) shrimp, peeled and deveined
- 2 tbsp olive oil
- Juice of 1 lime
- 2 garlic cloves, minced
- ½ tsp chili flakes (optional)
- ½ tsp salt
- ¼ tsp black pepper
Rice
- 2 cups cooked jasmine or white rice (from 1 cup dry rice)
Fruit and Vegetables
- 1 large ripe mango, peeled and diced
- 1 large avocado, diced
- ½ cup red onion, thinly sliced
- 1 small cucumber, sliced or diced
- 1 small jalapeño, thinly sliced (optional)
- ½ cup edamame, cooked and shelled
Dressing
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp honey or maple syrup
- 1 tsp Dijon mustard
- Pinch of salt
Toppings
- 1 tbsp toasted sesame seeds or chopped nuts (optional)
Instructions
- Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, lime juice, minced garlic, chili flakes, salt, and black pepper. Let it marinate for 10–15 minutes while you prepare the other ingredients to allow flavors to infuse.
- Cook the Rice: If you don’t have pre-cooked rice, cook 1 cup of dry jasmine or white rice according to the package instructions to yield about 2 cups of cooked rice. Set it aside once done.
- Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 1 to 2 minutes on each side until they turn pink and opaque. Remove from heat promptly to avoid overcooking.
- Make the Dressing: In a small bowl, whisk together lime juice, olive oil, honey (or maple syrup), Dijon mustard, and a pinch of salt until smooth and emulsified. Set aside.
- Assemble the Bowls: Divide the cooked rice evenly among four bowls. Top each with the cooked shrimp, diced mango, diced avocado, sliced cucumber, thinly sliced red onion, cooked edamame, and jalapeño slices if using.
- Add Toppings and Serve: Drizzle the prepared citrus dressing over each bowl and sprinkle with toasted sesame seeds or chopped nuts for added crunch. Serve immediately and enjoy the fresh, vibrant flavors.
Notes
- Marinate shrimp for at least 10 minutes to maximize flavor absorption, but don’t exceed 30 minutes to avoid affecting the texture.
- Use pre-cooked rice to save time if desired.
- Adjust the jalapeño quantity or omit it based on your preferred spice level.
- Substitute edamame with green peas for a different but similar texture.
- For a vegetarian version, omit shrimp and increase the edamame or add tofu cubes.
- Leftovers can be stored separately for up to 2 days; add avocado fresh when serving to prevent browning.
