For the Panelle Batter

  • 2 cups water

  • 2 tablespoons olive oil (plus more for frying)

Instructions

  1. Prepare the Batter: In a medium saucepan, whisk together the chickpea flour, water, salt, and pepper until smooth and free of lumps. Add the chopped parsley and olive oil, mixing well to combine.
  2. Cook the Batter: Place the saucepan over medium heat and cook the mixture, constantly stirring with a wooden spoon to prevent lumps, for about 8-10 minutes until the mixture thickens to a polenta-like consistency. The batter should pull away from the sides of the pan when ready.
  3. Set the Batter: Transfer the thickened batter to a greased shallow dish or baking tray. Spread it out evenly to about 1/2 inch thickness. Let it cool to room temperature, then refrigerate for at least 1 hour until firm and set.
  4. Cut the Panelle: Once the batter is firm, remove from the refrigerator and cut into rectangles or diamond shapes about 2 to 3 inches long and 1 inch wide.
  5. Fry the Panelle: Heat a few inches of olive oil in a deep frying pan or pot over medium-high heat until it reaches 350°F (175°C). Fry the panelle fritters in batches, turning occasionally, until golden and crispy on all sides, about 2-3 minutes per batch.
  6. Drain and Serve: Remove the panelle with a slotted spoon and drain on paper towels to remove excess oil. Serve hot, garnished with lemon wedges for squeezing over the fritters and additional parsley if desired.
