Ingredients
- 2 lbs beef stew meat or chuck roast, cut into bite-sized pieces
- 1.5 lbs baby potatoes, halved
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme or Italian seasoning
- Optional: fresh parsley for garnish
Instructions
- Season the beef pieces with salt, black pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat and sear the beef until browned on all sides.
- Transfer the seared beef to the slow cooker.
- Add the halved baby potatoes to the slow cooker.
- Sprinkle minced garlic over the beef and potatoes and distribute butter pieces evenly.
- Pour in the beef broth and sprinkle dried thyme or Italian seasoning.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until beef is tender and potatoes are cooked through.
- Gently stir before serving to coat everything in the garlic butter sauce.
- Garnish with fresh parsley if desired and serve warm.

- Searing the beef adds extra flavor but can be skipped if short on time.
