Description

Ingredients

  • 2 lbs beef stew meat or chuck roast, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or Italian seasoning
  • Optional: fresh parsley for garnish

Instructions

  1. Season the beef pieces with salt, black pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat and sear the beef until browned on all sides.
  3. Transfer the seared beef to the slow cooker.
  4. Add the halved baby potatoes to the slow cooker.
  5. Sprinkle minced garlic over the beef and potatoes and distribute butter pieces evenly.
  6. Pour in the beef broth and sprinkle dried thyme or Italian seasoning.
  7. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until beef is tender and potatoes are cooked through.
  8. Gently stir before serving to coat everything in the garlic butter sauce.
