Description

This Slow Cooker Spinach Artichoke Dip is a creamy, cheesy appetizer perfect for sharing at parties or gatherings. Combining tender artichoke hearts, fresh baby spinach, and a blend of cream cheese, Greek yogurt, Parmesan, and mozzarella, it delivers rich, savory flavors with minimal effort. The slow cooker method ensures the dip is melted to perfection and stays warm for serving alongside baguette slices, crackers, or fresh vegetables.

Ingredients

Dip Ingredients

  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 4 cups loosely packed fresh baby spinach, roughly chopped
  • 8 ounces full-fat cream cheese
  • ½ cup plain Greek yogurt (whole or 2%)
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ½ teaspoon granulated garlic
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Assemble: Add all the ingredients to a 3- or 4-quart slow cooker. Stir gently to combine the artichoke hearts, chopped spinach, cream cheese, Greek yogurt, Parmesan, mozzarella, granulated garlic, kosher salt, and black pepper until evenly mixed. Cover the slow cooker and set it on low heat.
  2. Cook: Allow the mixture to cook for 2 to 3 hours, or until all the ingredients are melted and creamy, stirring occasionally if possible to ensure even heating and prevent sticking.
  3. Stir And Finish: Carefully uncover the slow cooker and stir thoroughly to fully incorporate the ingredients. If the dip appears too thick for your liking, gradually add 1 to 2 tablespoons of milk or water, stirring until you achieve a smooth, creamy consistency.
  4. Serve Warm: Transfer the warm spinach artichoke dip to a serving dish and enjoy immediately with sliced baguette, crackers, fresh vegetables, or your favorite dippers for a delicious appetizer experience.

Notes

  • Use full-fat cream cheese and Greek yogurt for the creamiest texture and richest flavor.
  • Fresh baby spinach is preferred for better texture, but frozen spinach (thawed and drained) can be substituted if needed.
  • Adjust garlic, salt, and pepper according to taste preferences.
  • To keep the dip warm for longer, switch the slow cooker to the ‘warm’ setting after cooking.
  • For a lower-fat version, use reduced-fat cream cheese and yogurt, but the dip may be less creamy.
