Description

This Slow Roasted Cabbage and Sauerkraut Casserole is a hearty and flavorful dish that combines tender roasted cabbage with tangy sauerkraut. Slow roasting enhances the natural sweetness of cabbage while mellowing the sharpness of sauerkraut, resulting in a comforting and satisfying casserole perfect as a side or main for vegetarian meals.

Ingredients

Vegetables

  • 1 medium green cabbage, cored and cut into wedges
  • 2 cups sauerkraut, drained
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced

Liquids & Seasonings

  • 1/2 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon caraway seeds (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika

Toppings

  • 1/2 cup shredded sharp cheddar cheese (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven: Set your oven to 300°F (150°C) to allow for slow roasting which will gently caramelize the cabbage and blend the flavors.
  2. Prepare the Vegetables: Core and cut the cabbage into large wedges, slice the onion thinly, and mince the garlic. Drain the sauerkraut well to avoid excess moisture in the casserole.
  3. Layer the Casserole: In a large baking dish, arrange the cabbage wedges evenly. Scatter the sauerkraut and sliced onions over and around the cabbage. Sprinkle the minced garlic evenly across the top.
  4. Add Seasonings and Liquids: Drizzle olive oil and vegetable broth over the vegetables. Sprinkle caraway seeds (if using), smoked paprika, salt, and pepper evenly over the casserole for well-rounded flavor.
  5. Slow Roast: Cover the casserole with foil and roast in the preheated oven for approximately 3 hours. This slow roasting process softens the cabbage entirely and allows the flavors to meld beautifully.
  6. Add Cheese and Finish Roasting: After 3 hours, remove the foil and sprinkle shredded cheddar cheese over the top if using. Return the casserole to the oven uncovered and roast for an additional 15 minutes until the cheese is melted and golden.
  7. Garnish and Serve: Remove from oven, garnish with fresh chopped parsley, and let it rest for 5 minutes. Serve warm as a comforting side dish or a vegetarian main course.

Notes

  • For a vegan version, omit the cheese or substitute with vegan cheese.
  • Make sure to drain the sauerkraut well to prevent the casserole from becoming too watery.
  • This casserole pairs beautifully with roasted meats or as a filling vegetarian main with crusty bread.
  • Caraway seeds add a traditional flavor that complements cabbage but can be omitted if unavailable or disliked.
  • Leftovers keep well in the refrigerator for up to 4 days and reheat nicely.
