Description
This Slow Roasted Cabbage and Sauerkraut Casserole is a hearty and flavorful dish combining tender slow-roasted cabbage with tangy sauerkraut. Perfect as a comforting side dish or a satisfying vegetarian main, it brings out the natural sweetness of cabbage balanced by the vibrant acidity of sauerkraut, all slowly cooked to develop deep, rich flavors.
Ingredients
Cabbage and Sauerkraut
- 1 medium head green cabbage, cored and chopped (about 6 cups)
- 2 cups sauerkraut, drained
Other Ingredients
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup vegetable broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon caraway seeds
- Salt and freshly ground black pepper, to taste
- 1/4 cup grated sharp cheddar cheese (optional, for topping)
Instructions
- Preheat Oven: Preheat your oven to 300°F (150°C) to prepare for slow roasting the cabbage mixture gently and evenly.
- Sauté Aromatics: In a large skillet over medium heat, warm the olive oil. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Combine Ingredients: In a large mixing bowl, combine the chopped cabbage, sautéed onion and garlic, drained sauerkraut, smoked paprika, caraway seeds, salt, and pepper. Toss well to evenly distribute the spices and sauerkraut throughout the cabbage.
- Prepare Casserole Dish: Lightly grease a 9×13-inch baking dish. Transfer the cabbage and sauerkraut mixture into the dish and pour the vegetable broth evenly over the top to keep the mixture moist during roasting.
- Slow Roast: Cover the casserole dish with aluminum foil and place it in the preheated oven. Slow roast for 2 to 2.5 hours, stirring halfway through, until the cabbage is very tender and flavors are well blended.
- Add Cheese and Broil (optional): Remove the foil and sprinkle the grated cheddar cheese evenly on top. Place the casserole under the broiler for 3-5 minutes or until the cheese is melted and golden brown, watching carefully to prevent burning.
- Serve: Let the casserole cool for a few minutes before serving. Enjoy as a comforting side dish or a warming vegetarian main course.
Notes
- You can substitute smoked paprika with regular paprika or add a pinch of chili flakes for a spicy kick.
- For a vegan version, omit the cheese or use a plant-based cheese alternative.
- Leftovers can be stored in an airtight container in the fridge for up to 4 days and reheated gently on the stovetop or in the oven.
- If you prefer a less sour flavor, rinse the sauerkraut lightly before using.
- Adding a small amount of diced bacon or sausage can add a smoky flavor if not keeping the dish vegetarian.
