Instructions

- Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs until well combined. The graham cracker crumbs add that distinct s’mores flavor and texture.
- Cream butter and sugars: In a large bowl, use an electric mixer to cream the softened butter, brown sugar, and granulated sugar together until the mixture is light and fluffy, which usually takes about 2–3 minutes.
- Add egg and vanilla: Beat in the egg and vanilla extract until fully incorporated, creating a smooth cookie dough base.
- Combine wet and dry ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can make the cookies tough.
