Spinach Artichoke Filling

  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup sour cream
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Oven and Chicken: Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels, then season both sides with salt and pepper. In a large skillet, heat olive oil over medium-high heat.
  2. Sear the Chicken: Place the chicken breasts in the hot skillet and sear each side for 2-3 minutes until golden brown. This step locks in juices and adds flavor. Remove chicken from skillet and set aside.
  3. Make the Spinach Artichoke Mixture: In a mixing bowl, combine chopped spinach, artichoke hearts, softened cream cheese, shredded mozzarella, grated Parmesan, minced garlic, sour cream, crushed red pepper flakes, and season with salt and pepper. Mix thoroughly until well blended.
  4. Assemble the Bake: Place the seared chicken breasts evenly spaced in a baking dish. Spoon the spinach artichoke mixture generously over the top of each chicken breast, spreading it evenly.
  5. Bake the Dish: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center (internal temperature should reach 165°F / 74°C). The topping should be bubbly and slightly golden.
  6. Rest and Serve: Remove from oven and let the dish rest for 5 minutes before serving to allow juices to redistribute and flavors to meld.
