Description

This Spinach Mushroom Breakfast Casserole is a hearty and savory dish perfect for a nutritious morning meal. Combining fresh spinach, mushrooms, eggs, cheese, and seasonings, it offers a flavorful and satisfying way to start your day. Baked to golden perfection, this casserole is versatile, easy to prepare ahead, and ideal for family breakfasts or brunch gatherings.

Ingredients

Vegetables

  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Egg Mixture

  • 8 large eggs
  • 1 cup milk (whole or 2%)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme

Cheese

  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese

Other

  • 2 tablespoons olive oil or butter
  • Cooking spray or extra butter for greasing the baking dish

Instructions

  1. Prepare the Vegetables: Preheat your oven to 350°F (175°C). Heat olive oil or butter in a large skillet over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes. Add mushrooms and cook until softened, about 5 minutes. Stir in minced garlic and cook for an additional 1 minute. Finally, add the chopped spinach and sauté until wilted, about 2 minutes. Remove from heat and set aside.
  2. Mix the Egg Base: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and dried thyme until well combined and slightly frothy.
  3. Combine Ingredients: Lightly grease a 9×13-inch baking dish with cooking spray or butter. Spread the sautéed vegetable mixture evenly over the bottom of the dish. Sprinkle half of the shredded cheddar and mozzarella cheeses over the vegetables. Pour the egg mixture evenly over the contents, then top with the remaining shredded cheese.
  4. Bake the Casserole: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the casserole is set in the center and the top is golden brown. You can test doneness by inserting a toothpick into the center; it should come out clean.
  5. Cool and Serve: Let the casserole cool for about 5-10 minutes before slicing. Serve warm, optionally garnished with fresh herbs like parsley or chives for extra flavor and color.
