Ingredients
Lasagna Rolls
- 12 noodles lasagna
- 2 cups ricotta cheese
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups marinara sauce
- for garnish fresh basil (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking the rolls evenly.
- Cook Noodles: Cook the lasagna noodles according to package instructions until al dente. Drain them carefully and lay flat on a kitchen towel to prevent sticking.
- Prepare Filling: In a medium bowl, combine ricotta cheese, chopped fresh spinach, half of the shredded mozzarella, grated Parmesan, the large egg, salt, and pepper. Mix thoroughly to create a smooth, well-seasoned filling.
- Prepare Baking Dish: Spread about 1/4 cup of marinara sauce on the bottom of a baking dish to keep the rolls moist and prevent sticking during baking.
- Assemble Rolls: Take one lasagna noodle and spread approximately 2 tablespoons of the ricotta-spinach mixture evenly along the length. Roll the noodle up tightly and place it seam-side down in the prepared baking dish. Repeat this process with the remaining noodles and filling.
- Add Sauce and Cheese: Pour the remaining marinara sauce evenly over the rolled lasagna. Sprinkle the rest of the shredded mozzarella cheese on top to create a golden, bubbly crust when baked.
- Bake: Bake the assembled dish for 25-30 minutes until the cheese on top is bubbly and golden brown, and the sauce is heated through.
- Serve: Allow the lasagna rolls to cool for a few minutes before serving. Garnish with fresh basil leaves if desired for added flavor and presentation.
Notes
- Use no-boil lasagna noodles to save time, but adjust cooking accordingly.
- Fresh spinach can be substituted with frozen, but ensure it is thoroughly drained and squeezed dry before mixing.
- For a richer taste, add a pinch of nutmeg to the ricotta filling.
- These rolls are perfect for meal prepping and can be refrigerated for up to 3 days or frozen for longer storage.
- If desired, add crushed red pepper flakes to the marinara sauce for a spicy kick.
