Description
A delightful copycat recipe inspired by Starbucks’ Potato Cheddar and Chive Bakes. This recipe features flaky puff pastry filled with a creamy mixture of mashed russet potatoes, sharp cheddar cheese, fresh chives, and subtle garlic seasoning, baked to a golden perfection. Perfect as a savory snack or appetizer, these bakes offer a comforting combination of flaky crust and rich filling.
Ingredients
Potato Filling
- 1 pound russet potatoes (peeled and cubed)
- 1 cup shredded cheddar cheese (sharp or mild, your choice)
- 1/4 cup chopped fresh chives
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Pastry
- 1 sheet puff pastry (thawed if frozen)
- 1 egg (for egg wash)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for baking the pastry evenly.
- Cook Potatoes: Boil the peeled and cubed russet potatoes in salted water for about 15 minutes or until tender. Drain thoroughly to remove excess water.
- Mash and Mix Filling: Mash the cooked potatoes in a bowl until smooth. Stir in the shredded cheddar cheese, chopped chives, garlic powder, and season with salt and pepper to taste. Mix until well combined.
- Prepare Pastry: On a floured surface, roll out the puff pastry sheet into a rectangle. Cut the pastry into squares approximately 4 by 4 inches in size.
- Fill Pastry Squares: Place a spoonful of the potato mixture in the center of each pastry square.
- Form Bakes: Fold each pastry square over diagonally to form triangles. Seal the edges firmly using a fork to prevent the filling from leaking during baking.
- Apply Egg Wash: Brush the tops of each pastry triangle with the beaten egg to create a beautiful golden brown finish when baked.
- Bake: Place the prepared bakes on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
- Cool and Serve: Allow the bakes to cool slightly on a wire rack before serving to enjoy the optimal texture and to avoid burns. Serve warm and enjoy!
Notes
- You can use either mild or sharp cheddar cheese according to your taste preference.
- Fresh chives elevate the flavor, but you can substitute with green onions or dried chives if fresh is unavailable.
- Make sure the potatoes are well drained before mashing to avoid a soggy filling.
- For a vegan version, substitute puff pastry with a vegan one and use non-dairy cheese and egg wash alternatives.
- These bakes reheated in an oven or toaster oven regain crispiness, making them an excellent make-ahead snack.
- Adjust seasoning as needed; adding a pinch of smoked paprika or cayenne can add a subtle kick.
