Description

A quick and flavorful strawberry compote made with fresh strawberries, lemon juice, and a touch of vanilla. This sweet and juicy topping is perfect for pancakes, yogurt, cheesecake, oatmeal, and desserts.


Ingredients

  • 4 cups fresh strawberries, sliced
  • 1/3 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp water
  • 1 tsp cornstarch mixed with 1 tbsp water (optional)

Instructions

  1. Wash and slice the strawberries.
  2. Place the strawberries in a saucepan with sugar, lemon juice, and water.
  3. Cook over medium heat, stirring occasionally, until the strawberries soften and release their juices.
  4. If using cornstarch, mix it with water in a small bowl and stir it into the saucepan.
  5. Continue cooking for a few more minutes until the compote becomes glossy and slightly thickened.
  6. Remove from heat and stir in vanilla extract.
  7. Allow the compote to cool slightly before serving warm or chilled.

  • Frozen strawberries can be used but may require slightly longer cooking time.
