Ingredients
- 4 cups fresh strawberries, sliced

Instructions
- Wash and slice the strawberries.
- Place the strawberries in a saucepan with sugar, lemon juice, and water.
- Cook over medium heat, stirring occasionally, until the strawberries soften and release their juices.
- If using cornstarch, mix it with water in a small bowl and stir it into the saucepan.
- Continue cooking for a few more minutes until the compote becomes glossy and slightly thickened.
- Remove from heat and stir in vanilla extract.
- Allow the compote to cool slightly before serving warm or chilled.

- Frozen strawberries can be used but may require slightly longer cooking time.
