Description

These Strawberry Kiss Cake Mix Cookies are a delightful twist on classic cookies, combining the ease of a cake mix with the sweet, fruity flavor of strawberry kisses. Soft, chewy, and perfect for any occasion, these cookies are quick to prepare and bring a nostalgic berry flavor that everyone will love.

Ingredients

Dry Ingredients

  • 1 box strawberry cake mix (about 15.25 oz)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1/3 cup vegetable oil

Topping

  • 24 strawberry Hershey’s Kisses, unwrapped

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the strawberry cake mix, baking powder, and salt, mixing well to ensure even distribution of leavening agents and seasoning.
  3. Add Wet Ingredients: Add the eggs and vegetable oil to the dry mix. Stir with a spoon or electric mixer until a smooth dough forms and all ingredients are well incorporated.
  4. Shape Cookies: Using a tablespoon or small cookie scoop, form dough balls and place them about 2 inches apart on the prepared baking sheet.
  5. Bake Cookies: Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the edges are set but the centers are still soft.
  6. Add Strawberry Kisses: Immediately after removing the cookies from the oven, gently press one unwrapped strawberry Hershey’s Kiss into the center of each cookie. The warmth will help the candy adhere and soften slightly.
  7. Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely so the cookies firm up around the chocolate center.

Notes

  • For firmer cookies, bake a minute or two longer but be careful not to overbake as the cookies can dry out.
  • You can substitute vegetable oil with melted butter or coconut oil for a different flavor profile.
  • Store cookies in an airtight container at room temperature for up to 4 days.
  • These cookies freeze well; freeze baked cookies without the Kiss and add the Kiss after thawing.
  • If you prefer a more intense strawberry flavor, you can add 1/2 teaspoon strawberry extract to the wet ingredients.
