Description

Ingredients

  • 2 cups cooked rice (white, brown, or cilantro-lime rice)
  • 2 cups chicken breast or thighs, cooked and sliced
  • 1 1/2 cups corn kernels (fresh, canned, or grilled)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream or yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup cotija or feta cheese, crumbled
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Season the chicken with salt, pepper, paprika, and chili powder.
  3. Cook the chicken in a skillet over medium heat until golden and fully cooked, then slice into pieces.
