Ingredients

Toast

  • 2 slices Sourdough Bread
  • 2 tbsp Olive Oil or Butter
  • Salt & Black Pepper, to taste

Peaches

  • 1 Fresh Peach, peeled and sliced into 1/4-inch wedges
  • 2 tbsp Honey (divided)
  • 1 spring Fresh Thyme (leaves only)
  • 1 tbsp Water

Toppings

  • 4 tbsp Goat Cheese, softened
  • 2 tbsp Camel City Mustard Microgreens

Instructions

  1. Prepare the Peaches: Peel the fresh peach and slice it into 1/4-inch thick wedges. Heat a nonstick skillet over medium heat and add 1 tablespoon of water, 1 tablespoon of honey, and the fresh thyme leaves. Add the peach slices, cover the skillet, and simmer for 5-7 minutes until the peaches become tender and caramelized.
  2. Toast the Bread: Preheat a griddle or skillet over medium heat. Drizzle olive oil or spread butter on both sides of the sourdough bread slices. Cook the bread slices on the griddle for about 1-3 minutes per side until they turn crispy and golden brown.
  3. Assemble the Toast: Spread a generous layer of softened goat cheese evenly over the toasted sourdough slices. Arrange a single layer of the caramelized peach wedges on top of the goat cheese. Add the mustard microgreens evenly over the peaches. Drizzle the remaining honey over the assembled toast. Finally, season with salt and freshly ground black pepper to taste.
