Ingredients
Main Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 small red bell pepper, diced
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 cup cooked black beans or cooked chicken breast, diced (protein source)
- 2 large eggs (optional, for topping)
- Salt and pepper, to taste
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- Prepare Sweet Potatoes: Peel and dice the sweet potatoes into small, uniform cubes to ensure even cooking. Set aside.
- Roast Sweet Potatoes: Preheat the oven to 425°F (220°C). Toss the diced sweet potatoes with half the olive oil, smoked paprika, cumin, salt, and pepper. Spread them evenly on a baking sheet and roast for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
- Sauté Vegetables: While the sweet potatoes roast, heat the remaining olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking for 5-7 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.
- Add Protein: Stir in the cooked black beans or diced chicken breast to the skillet with vegetables. Cook for 2-3 minutes until heated through and well combined.
- Combine and Cook Hash: Once the sweet potatoes are roasted, add them to the skillet with the vegetable and protein mixture. Stir well to combine all ingredients and cook for another 3-5 minutes to meld flavors.
- Optional Eggs: In a separate pan, cook eggs to your preference (fried, poached, or scrambled). Top the hash with the eggs just before serving.
- Garnish and Serve: Sprinkle chopped fresh parsley or cilantro over the hash. Adjust seasoning with additional salt and pepper if needed. Serve warm as a wholesome breakfast dish.

- Add a dash of hot sauce or red pepper flakes for a spicy kick.
- Feel free to use other vegetables such as zucchini or mushrooms based on preference.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in a skillet or microwave.
