Instructions

  1. Cook the sweet potatoes: Place the peeled and chopped sweet potatoes in a large pot and cover with water. Bring to a boil over medium-high heat, then reduce heat to medium and simmer for 15-20 minutes until the sweet potatoes are very tender when pierced with a fork.
