Ingredients
For Pickled Okra
- 1 pound fresh young okra, washed and trimmed
- 4 cups distilled white vinegar (5% acidity)
- 4 cloves garlic, peeled and halved
- 2 tablespoons pickling salt or kosher salt
- 1 tablespoon sugar
- 2 teaspoons whole black peppercorns
- 2 teaspoons mustard seeds
- 1 teaspoon red pepper flakes (optional for heat)
- 4 fresh dill sprigs or 2 teaspoons dill seeds
- 4 sterilized pint canning jars with lids
Instructions
- Prepare the jars. Sterilize four pint-sized canning jars and their lids by boiling them in water for 10 minutes. Carefully remove and let dry.
- Trim the okra. Rinse the fresh okra pods and trim the stems, leaving the pods whole to maintain a better crunch during pickling.
- Make the pickling brine. In a saucepan, combine the vinegar, pickling salt, sugar, peppercorns, mustard seeds, and red pepper flakes if using. Bring the mixture to a boil, stirring to dissolve the salt and sugar completely.
- Fill the jars. Place one garlic clove and one dill sprig (or ½ teaspoon dill seeds) into each sterilized jar. Pack the okra pods standing upright tightly into each jar, leaving about ½-inch headspace at the top.
- Pour the hot brine. Carefully ladle the boiling vinegar brine over the okra in each jar, ensuring the pods are fully submerged and maintaining the ½-inch headspace.
- Seal and cool. Wipe the rims of the jars clean, place the lids on top, and screw on bands finger-tight. Let the jars cool to room temperature before refrigerating.
- Refrigerate and wait. Refrigerate the pickled okra for at least 5 days before eating to allow flavors to develop. The okra will remain crunchy and keep well for up to 2 months when refrigerated.
