Description

  • ½ to 1 jalapeño pepper, stemmed and diced

  • 5 large eggs, beaten
  • ¼ cup crumbled tortilla chips
  • ½ cup shredded Monterey jack cheese
  • ¼ cup chopped fresh cilantro

  • 4 tortillas, warmed
  • 1 avocado, sliced
  • Lime wedges
  • Homemade Salsa or Tomatillo Salsa

Instructions

  1. Heat the oil: In a medium nonstick skillet, heat 1 teaspoon of extra-virgin olive oil over medium heat, preparing the pan for sautéing the vegetables.
  2. Sauté the vegetables: Add the diced white onion, chopped tomatoes, diced jalapeño, finely chopped garlic, sea salt, and several grinds of fresh black pepper to the skillet. Cook for about 2 minutes, stirring occasionally, until the vegetables soften and release their flavors.
  3. Cook the eggs and chips: Pour the beaten eggs into the skillet with the sautéed veggies. Add the crumbled tortilla chips. Stir continuously to scramble the mixture evenly until the eggs are cooked through and the chips soften slightly.
  4. Add cheese and finish: Stir in the shredded Monterey jack cheese until it starts to melt. Remove the skillet from the heat and adjust seasoning to taste with additional salt and pepper if desired.
  5. Serve and garnish: Divide the migas evenly between two plates. Sprinkle the chopped fresh cilantro over the top. Serve immediately with warm tortillas, sliced avocado, lime wedges, and your choice of homemade salsa or tomatillo salsa to assemble tacos as you enjoy.
