For the Cake Layers

Instructions
- Prepare the Cake Batter: In a large bowl, whisk together the eggs and sugar until creamy and smooth. Add the yogurt, olive oil, and vanilla extract and mix until fully combined. In a separate bowl, sift together the flour, baking powder, cinnamon, cloves, and nutmeg. Gradually add the dry ingredients to the wet ingredients, folding gently until a smooth batter forms.
- Bake the Cake: Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan with olive oil or butter. Pour the batter into the pan and smooth the surface with a spatula. Bake for 35-40 minutes until the cake is golden and a toothpick inserted in the center comes out clean. Remove from the oven and allow to cool in the pan for 10 minutes, then transfer to a wire rack.
- Prepare the Honey Syrup: In a small saucepan, combine the honey, water, sugar, cinnamon stick, lemon zest, and star anise. Bring to a simmer over medium heat and cook for 10 minutes, stirring occasionally. Remove from heat and let the syrup cool slightly.
- Soak the Cake with Honey Syrup: While the cake is still warm, carefully pour the syrup evenly over the cake, allowing it to soak in. Let the cake rest for at least 30 minutes to absorb the syrup fully.
