Description

This Traditional Greek Honey Cake is a delightful homage to classic Mediterranean baking, combining rich honey and warm spices into a moist, tender cake. Perfect for celebrations or a cozy afternoon treat, this recipe offers an authentic taste of Greece with its fragrant aroma and comforting flavors.

Ingredients

Dry Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup honey (preferably Greek thyme honey)
  • ¾ cup vegetable oil
  • ¾ cup sugar
  • 3 large eggs
  • 1 cup fresh orange juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and prepare: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper to prevent sticking.
  2. Mix dry ingredients: In a large bowl, sift together the flour, baking soda, cinnamon, cloves, nutmeg, and salt. Set aside.
  3. Combine wet ingredients: In another large bowl, beat the eggs with the sugar until light and fluffy. Gradually add the oil, honey, orange juice, and vanilla extract, mixing well after each addition until fully combined.
  4. Incorporate dry into wet: Slowly add the dry ingredients to the wet ingredients, stirring gently with a spatula until just combined. Be careful not to overmix to keep the cake tender.
  5. Pour and bake: Pour the batter into the prepared cake pan, smoothing the top evenly. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and serve: Allow the cake to cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely. Optionally, drizzle with extra honey or dust with powdered sugar before serving for an added touch of sweetness.

Notes

  • Use authentic Greek thyme honey for the most traditional flavor.
  • This cake keeps well for several days and its flavor improves as it rests.
  • Store in an airtight container to maintain moisture.
  • For a nutty variation, sprinkle chopped walnuts on top before baking.
