Ingredients
Pasta Dough

- Prepare the dough: In a large bowl, combine the flour and salt. Make a well in the center and crack in the egg. Gradually add water, mixing together until a firm dough forms. Knead on a floured surface for about 8-10 minutes until smooth and elastic. Cover the dough and let it rest for 20 minutes.
- Roll out the dough: Divide the rested dough into smaller portions. Using a rolling pin, roll each portion out very thinly on a floured surface until almost translucent. Let the sheets dry slightly for 10-15 minutes to make cutting easier.
- Cut the pasta: Lightly dust the dough sheets with flour, then roll them loosely into a cylinder. Slice the rolled dough into thin ribbons, about 1/4 inch wide, to create the noodles. Unroll the cut noodles and spread them out to avoid sticking.
- Cook the noodles: Bring salted water to a boil in a large pot. Add the fresh noodles and cook for approximately 3-5 minutes or until tender but firm to the bite. Fresh pasta cooks faster than dried.
- Drain and serve: Drain the pasta and return it to the pot. Add the butter and toss gently until melted and evenly coating the noodles. Serve immediately, optionally topped with plain yogurt or crumbled Beyaz peynir for an authentic Turkish touch.
