Ingredients

Beef and Marinade

  • 3 lbs beef chuck roast
  • 2 chipotle peppers in adobo sauce
  • 1/4 cup adobo sauce (from chipotle peppers can)
  • 1 orange, juiced and zested
  • 1 lime, juiced and zested
  • 4 garlic cloves, minced
  • 1 medium onion, chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper
  • 1 tsp salt
  • 1/4 cup beef broth
  • 2 tbsp olive oil

Optional Garnishes and Serving Suggestions

  • Fresh cilantro, chopped
  • Diced onions
  • Warm tortillas or sandwich buns
  • Avocado slices or guacamole
  • Sour cream or crema
  • Shredded cheese

Instructions

  1. Prepare the marinade: In a blender or food processor, combine chipotle peppers, adobo sauce, orange juice and zest, lime juice and zest, garlic, onion, cumin, smoked paprika, oregano, black pepper, salt, and beef broth. Blend until smooth to create a flavorful marinade.
  2. Marinate the beef: Place the beef chuck roast in a large bowl or resealable bag. Pour the marinade over the meat ensuring it is fully coated. Let it marinate in the refrigerator for at least 2 hours, or preferably overnight, to enhance flavor penetration.
  3. Prepare the slow cooker: Lightly oil the slow cooker insert with olive oil to prevent sticking. Place the marinated beef and all marinade juices into the slow cooker.
  4. Cook the beef: Cover and cook on low heat for 8 hours, or on high for about 4-5 hours, until the beef is fork-tender and easily shredded.
  5. Shred the beef: Remove the beef from the slow cooker and place it on a cutting board. Using two forks, shred the meat into bite-sized pieces. Return the shredded beef to the slow cooker and stir to coat with the cooking juices.
  6. Serve: Serve the chipotle citrus shredded beef warm in tortillas, over rice bowls, or as a hearty sandwich filling. Garnish with fresh cilantro, diced onions, avocado, sour cream, or cheese, as desired.

Notes

  • Marinating overnight enhances the depth of flavor.
  • Use a beef chuck roast or brisket for best results and tenderness.
  • Chipotle peppers add smoky heat; adjust quantity to taste.
  • Leftovers store well in an airtight container in the refrigerator for up to 4 days.
  • Can be frozen for up to 3 months; thaw overnight before reheating.
