Fettuccine

  • 12 oz fettuccine pasta (gluten-free if desired)

Instructions

  1. Prepare the cashews: Soak raw cashews in water for at least 4 hours or boil them for 10 minutes to soften. Drain and rinse before using to ensure a smooth sauce texture.
  2. Cook the fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, typically 8-12 minutes. Drain the pasta, reserving 1/2 cup of pasta water for the sauce.
  3. Blend the sauce: In a high-speed blender, combine the soaked cashews, plant-based milk, nutritional yeast, minced garlic, olive oil, lemon juice, onion powder, salt, pepper, and nutmeg (if using). Blend on high until completely smooth and creamy, about 1-2 minutes.
  4. Heat the sauce: Pour the blended sauce into a large skillet or saucepan over medium heat. Stir frequently, cooking for about 3-5 minutes until the sauce thickens slightly and is heated through. If the sauce is too thick, add reserved pasta water a tablespoon at a time to reach desired consistency.
