Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, baking soda, salt, and ground cinnamon until well combined.
  3. Prepare wet ingredients: In another bowl, mash the ripe bananas thoroughly. Add the brown sugar, vegetable oil, almond milk, and vanilla extract, mixing well to combine all wet ingredients.
  4. Combine wet and dry mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold them together with a spatula until just combined, being careful not to overmix to keep the muffins tender.
