Doughnut Batter

Instructions
- Prepare the Vegan Custard Filling: In a small saucepan, combine the coconut milk, sugar, and cornstarch. Whisk over medium heat until the mixture thickens to a pudding-like consistency. Remove from heat and stir in vanilla bean paste. Transfer to a bowl and refrigerate until set, about 1 hour.
- Make the Doughnut Batter: In a mixing bowl, whisk together the almond milk and apple cider vinegar and let it curdle for 5 minutes. Add the vegetable oil and vanilla extract. In another bowl, sift together flour, sugar, baking powder, baking soda, and salt. Gradually combine the wet and dry ingredients to form a smooth batter.
