Ingredients
- 1 sheet vegan puff pastry
- 3 ripe peaches, sliced
- 1 cup vegan cream cheese
- 1/4 cup coconut cream
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 tablespoon brown sugar
- 1 tablespoon plant-based milk
- Powdered sugar for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the vegan puff pastry slightly and place it on the prepared baking sheet.
- Using a knife, score a border around the edges of the pastry without cutting all the way through.
- In a bowl, mix the vegan cream cheese, coconut cream, maple syrup, vanilla extract, and cornstarch until smooth and creamy.
- Spread the cream mixture evenly inside the scored pastry border.
- In another bowl, toss the sliced peaches with lemon juice and brown sugar.
- Arrange the peaches evenly over the cream filling.
- Brush the edges of the puff pastry with plant-based milk to encourage browning.
- Bake for 25 to 30 minutes until the pastry is puffed and golden brown.
- Allow the tart to cool slightly before dusting with powdered sugar and serving.
