Description

Ingredients

  • 1 sheet vegan puff pastry
  • 3 ripe peaches, sliced
  • 1 cup vegan cream cheese
  • 1/4 cup coconut cream
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar
  • 1 tablespoon plant-based milk
  • Powdered sugar for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the vegan puff pastry slightly and place it on the prepared baking sheet.
  3. Using a knife, score a border around the edges of the pastry without cutting all the way through.
  4. In a bowl, mix the vegan cream cheese, coconut cream, maple syrup, vanilla extract, and cornstarch until smooth and creamy.
  5. Spread the cream mixture evenly inside the scored pastry border.
