Description

This Vegan Pistachio Mousse Cake is a luscious and elegant dessert perfect for special occasions or whenever you crave a creamy, nutty treat. Crafted with a delicate pistachio-flavored mousse layered over a moist vegan cake base, this dairy-free and egg-free creation combines rich plant-based ingredients for a smooth, airy texture. The cake is beautifully garnished with chopped pistachios, adding a pleasant crunch and enhancing the nutty flavor profile.

Ingredients

For the Cake Base

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup almond milk (or any plant-based milk)
  • 1/3 cup vegetable oil
  • 1 tbsp apple cider vinegar
  • 2 tsp vanilla extract

For the Pistachio Mousse

  • 1 1/2 cups raw pistachios, soaked overnight and drained
  • 1 cup coconut cream, chilled
  • 1/2 cup powdered sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1/4 cup water (if needed for blending)
  • 1 tsp agar-agar powder
  • 2 tbsp water (for agar bloom)

For Garnish

  • 1/4 cup chopped pistachios
  • Fresh mint leaves (optional)

Instructions

  1. Prepare the Cake Base: Preheat your oven to 350°F (175°C). In a large bowl, whisk together flour, sugar, baking soda, and salt. In a separate bowl, combine almond milk, vegetable oil, apple cider vinegar, and vanilla extract. Pour the wet ingredients into the dry ingredients, stirring until just combined. Pour the batter into a greased 8-inch cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  2. Make Agar-Agar Gel: In a small saucepan, combine 2 tablespoons of water and agar-agar powder. Bring to a boil while stirring continuously, then reduce heat and simmer for 2 minutes to activate the agar. Remove from heat and let it cool slightly but do not let it set.
  3. Prepare Pistachio Mousse: In a high-speed blender, combine soaked pistachios, coconut cream, powdered sugar, maple syrup, vanilla extract, lemon juice, and water (if needed). Blend until smooth and creamy. With the blender running on a low speed, slowly drizzle in the warm agar-agar gel and blend again briefly to incorporate. The agar will help the mousse set firmly.
  4. Assemble the Cake: Slice the cooled cake horizontally or leave as is to create a flat surface. Pour the pistachio mousse over the cake base evenly. Smooth the top with a spatula. Refrigerate the assembled cake for at least 4 hours or until the mousse is fully set.
  5. Garnish and Serve: Before serving, sprinkle chopped pistachios over the top of the mousse layer and garnish with fresh mint leaves if desired. Slice and serve chilled for best texture and flavor.

Notes

  • Soaking the pistachios overnight softens them for a smoother mousse texture.
  • Ensure the agar-agar is fully dissolved and still warm when added to the mousse to avoid lumps and to allow proper setting.
  • You can substitute almond milk with any other plant-based milk like oat or soy milk.
  • Store leftover cake covered in the refrigerator for up to 3 days.
  • For a more intense pistachio flavor, add a few drops of natural pistachio extract to the mousse.
