Ingredients
For the Cake Base
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup almond milk (or any plant-based milk)
- 1/3 cup vegetable oil
- 1 tbsp apple cider vinegar
- 2 tsp vanilla extract
For the Pistachio Mousse
- 1 1/2 cups raw pistachios, soaked overnight and drained
- 1 cup coconut cream, chilled
- 1/2 cup powdered sugar
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 1/4 cup water (if needed for blending)
- 1 tsp agar-agar powder
- 2 tbsp water (for agar bloom)
For Garnish
- 1/4 cup chopped pistachios
- Fresh mint leaves (optional)
Instructions
- Prepare the Cake Base: Preheat your oven to 350°F (175°C). In a large bowl, whisk together flour, sugar, baking soda, and salt. In a separate bowl, combine almond milk, vegetable oil, apple cider vinegar, and vanilla extract. Pour the wet ingredients into the dry ingredients, stirring until just combined. Pour the batter into a greased 8-inch cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
- Make Agar-Agar Gel: In a small saucepan, combine 2 tablespoons of water and agar-agar powder. Bring to a boil while stirring continuously, then reduce heat and simmer for 2 minutes to activate the agar. Remove from heat and let it cool slightly but do not let it set.
- Prepare Pistachio Mousse: In a high-speed blender, combine soaked pistachios, coconut cream, powdered sugar, maple syrup, vanilla extract, lemon juice, and water (if needed). Blend until smooth and creamy. With the blender running on a low speed, slowly drizzle in the warm agar-agar gel and blend again briefly to incorporate. The agar will help the mousse set firmly.
- Assemble the Cake: Slice the cooled cake horizontally or leave as is to create a flat surface. Pour the pistachio mousse over the cake base evenly. Smooth the top with a spatula. Refrigerate the assembled cake for at least 4 hours or until the mousse is fully set.
- Garnish and Serve: Before serving, sprinkle chopped pistachios over the top of the mousse layer and garnish with fresh mint leaves if desired. Slice and serve chilled for best texture and flavor.

- Soaking the pistachios overnight softens them for a smoother mousse texture.
