Ingredients
For the Quesadilla Filling
- 1 cup cooked black beans, rinsed and drained
- 1/2 cup corn kernels (fresh or frozen)
- 1 small bell pepper, diced
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 1 cup vegan shredded cheese (such as Daiya or Violife)
- 2 tbsp olive oil or vegetable oil
For Assembling
- 4 large flour tortillas (ensure vegan-friendly)
- Optional toppings: guacamole, salsa, vegan sour cream, fresh cilantro
Instructions
- Prepare the vegetable filling: Heat 1 tablespoon of oil in a large skillet over medium heat. Add the diced onion and bell pepper, sautéing for about 4-5 minutes until softened.
- Add garlic and spices: Stir in the minced garlic, ground cumin, smoked paprika, salt, and pepper. Cook for another minute until fragrant.
- Mix in beans and corn: Add the black beans and corn kernels to the skillet. Cook for 3-4 minutes, stirring occasionally, until heated through and flavors meld. Remove from heat.
- Assemble the quesadilla: Lay one tortilla flat on a clean surface. Sprinkle a generous layer of vegan shredded cheese over half of the tortilla. Spoon about half of the bean and vegetable mixture over the cheese, then add a little more cheese on top to help bind. Fold the tortilla over to cover the filling.
- Cook the quesadilla: Heat the remaining tablespoon of oil in the skillet over medium heat. Carefully place the folded quesadilla in the pan and cook for 3-4 minutes on each side, pressing down gently with a spatula, until the tortilla is golden brown and crispy and the vegan cheese has melted.
- Repeat and serve: Repeat the assembly and cooking process with the remaining tortillas and filling. Slice each quesadilla into wedges and serve hot with your choice of guacamole, salsa, or vegan sour cream.
