Description

This Vegetarian Taco Salad is a vibrant, flavorful dish combining seasoned plant-based ground meat, fresh vegetables, and crunchy taco shells to create a satisfying and healthy meal. Perfect for a quick lunch or dinner, this salad is packed with protein, fiber, and crisp textures, all dressed with a zesty dressing for a delightful Mexican-inspired experience.

Ingredients

For the Salad:

  • 1 tablespoon olive oil
  • 1 cup plant-based ground meat substitute
  • 1 packet taco seasoning mix (about 1 ounce)
  • 6 cups mixed salad greens (romaine, iceberg, or your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup chopped red onion
  • 1/4 cup fresh cilantro leaves
  • 2 crunchy taco shells, broken into bite-sized pieces

For the Dressing:

  • 1/4 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon salsa
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste

Instructions

  1. Cook the Plant-Based Meat: Heat olive oil in a skillet over medium heat. Add the plant-based ground meat substitute and cook, stirring occasionally, until browned and heated through, about 5-7 minutes. Sprinkle the taco seasoning over the meat and stir well to coat evenly. Add a splash of water if needed and cook for another 2 minutes until the seasoning is fully absorbed.
  2. Prepare the Dressing: In a small bowl, combine the sour cream or Greek yogurt, lime juice, salsa, ground cumin, and a pinch of salt and pepper. Whisk together until smooth and set aside.
  3. Assemble the Salad: In a large salad bowl, combine the mixed salad greens, cherry tomatoes, black beans, corn kernels, diced avocado, shredded cheese, chopped red onion, and fresh cilantro. Gently toss to mix the ingredients evenly.
  4. Add the Warm Meat and Taco Shells: Spoon the warm, seasoned plant-based meat over the salad and sprinkle in the broken taco shell pieces for extra crunch. Toss lightly once more to distribute all components.
  5. Serve with Dressing: Drizzle the prepared dressing over the salad just before serving, or serve it on the side to let everyone add their desired amount. Enjoy your fresh and flavorful vegetarian taco salad!

Notes

  • For added protein, sprinkle with roasted pumpkin seeds or pepitas.
  • Use dairy-free sour cream and cheese to make the dish vegan.
  • If you prefer a spicier salad, add diced jalapeños or a dash of hot sauce to the dressing.
  • Substitute plant-based meat with crumbled tofu or tempeh for a homemade option.
  • The taco shells can be replaced with baked tortilla strips for a lighter crunch.
