These homemade Watermelon Fruit Roll-Ups are a delightful and healthier alternative to store-bought fruit snacks. Made with fresh watermelon, a touch of lime juice, and sugar, they offer a naturally sweet, tangy, and chewy treat perfect for snacking or gifting.


Ingredients

Fruit Roll-Up Base

  • Cooking spray, for greasing
  • 8 cups cubed watermelon
  • 1/2 cup granulated sugar
  • 1 lime, juiced

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 170°F (approximately 77°C). Line a large rimmed baking sheet with parchment paper and lightly grease it with cooking spray to prevent sticking.
  2. Blend watermelon: Place the cubed watermelon in a blender and blend until smooth, creating a puree base for the fruit roll-ups.
  3. Strain puree: Pour the watermelon puree over a fine mesh strainer lined with cheesecloth or paper towels. Allow most of the liquid to drain out until about 2 cups of watermelon solids remain. Save the strained juice for another use, like a refreshing drink.
  4. Mix ingredients: In a medium-sized bowl, whisk together the concentrated watermelon solids, granulated sugar, and freshly squeezed lime juice until fully combined and smooth.
  5. Spread mixture: Divide the watermelon mixture evenly between the prepared baking sheets. Using an offset spatula, spread it out evenly into smooth, thin layers to ensure uniform drying.
  6. Bake: Place the baking sheets in the oven and bake for 3 to 4 hours, or until the fruit leather is dried out and no longer sticky to the touch.
  7. Cut and roll: Remove the dried fruit leather from the oven and, using scissors, cut it into vertical strips. Roll up each strip tightly, and store in an airtight container or wrap individually for easy snacking.
