Description

Whole Roasted Branzino is a simple yet elegant Mediterranean seafood dish featuring a whole European sea bass seasoned with fresh herbs, garlic, lemon, and olive oil, then roasted to perfection until the skin is crisp and the flesh is tender and flavorful. This recipe highlights bright, fresh flavors and a straightforward cooking method ideal for an impressive and healthy dinner.

Ingredients

Fish and Seasoning

  • 1 whole Branzino (about 1 to 1.5 pounds), cleaned and scaled
  • 2 tablespoons extra virgin olive oil
  • 1 lemon, thinly sliced
  • 3 cloves garlic, thinly sliced
  • Fresh herbs such as 2 tablespoons chopped parsley, 2 tablespoons chopped thyme, or fresh rosemary sprigs
  • Salt to taste (about 1 teaspoon)
  • Freshly ground black pepper to taste

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to ensure it reaches the perfect temperature for roasting the fish evenly and getting a crisp skin.
  2. Prepare the Branzino: Rinse the whole fish under cold water and pat dry thoroughly with paper towels. This helps achieve crispy skin during roasting.
  3. Season the cavity: Stuff the inside of the fish with lemon slices, garlic slices, and fresh herbs, which infuse the fish with aromatic flavors as it roasts.
  4. Season the exterior: Brush the outside of the fish with olive oil and sprinkle generously with salt and freshly ground black pepper on both sides for balanced seasoning.
  5. Roast the fish: Place the prepared fish on a lined baking sheet or a roasting pan. Roast in the preheated oven for about 20-25 minutes, or until the flesh is opaque, flakes easily with a fork, and the skin is golden and crisp.
  6. Rest before serving: Remove from the oven and let the fish rest for 3-5 minutes; this allows the juices to redistribute, enhancing moistness and flavor.
  7. Serve: Transfer to a serving platter and optionally garnish with extra fresh herbs and a squeeze of fresh lemon juice for an added burst of brightness.

Notes

  • Make sure the Branzino is fully cleaned and scaled for the best texture.
  • Adjust cooking time based on the size of the fish; larger fish may require a few more minutes.
  • Use a meat thermometer to check doneness if desired: the internal temperature should reach 145°F (63°C).
  • This dish pairs beautifully with simple roasted vegetables or a fresh green salad.
  • For added flavor, drizzle the fish with additional good-quality olive oil before serving.
