- Mix ingredients: In a large bowl, combine the grated zucchini, salt, flour, grated Parmesan cheese, egg, minced garlic, chopped parsley, and black pepper. Mix thoroughly until the batter is well combined.
- Heat the oil: Heat olive oil in a large non-stick skillet over medium heat until shimmering.
